This delicious dinner is easy to put together with simple ingredients you’re likely to have at hand. The use of Gouda cheese will take your meatloaf cooking to a whole new level. You can purchase this in 6 oz solid pieces, then cut into sticks for inside the meatloaf and shred them for the sauce. The pre-sliced version also works well.

Ingredients You’ll Need
Ground meat: I use mostly lean ground beef mixed with a little ground pork. The pork helps the meatloaf mixture hold together while giving it extra flavor.
Gouda cheese: You can buy this in many different varieties. Young gouda gives a sweet, mild flavor, while aged gouda is nutty with some tanginess. Smoked gouda cheese works great too.
If there’s none available near you, you could substitute the gouda with different types of cheese, such as mozzarella cheese, cream cheese or even Monterey Jack.
Onion – Minced onion helps fill out the mixture while providing a delicious savory flavor.
Minced Garlic: An essential addition to most meals and incredibly good for you.
Worcestershire sauce: The acidity of this special sauce will make the flavors of your meatloaf pop!
Egg: helps to bind the meatloaf together.
Ketchup: I use sugar free ketchup to enhance the flavors.

Prepping the Gouda
Firstly, cut off six sticks from your solid piece of Gouda. You can use the presliced version, just stack 6 slices and cut into strips.
Shred the rest of the gouda for the sauce. You need about 1/2 cup. If you don’t have a grater, you can chop into small cubes with a knife.

- Place in a preheated oven and bake for about 45-50 minutes at 375 F. Place some aluminum foil on top if your meatloaf starts burning.
- While baking the meatloaf, make the sauce. Add the sauce ingredients to a pan and cook on medium heat. Be sure to keep whisking, so the sauce doesn’t burn!
- Once everything is cooked, serve your meatloaf sliced with the thick cheese sauce drizzled on top. To finish, garnish with fresh parsley.

Let the meatloaf rest and cool to room temperature before putting it in the fridge. Remember to put it in an airtight container or wrap it with cling film. It should last up to 3 days in the fridge.
